BASANTI PULAO / SAFFRON FLAVORED SHAHI PULAO
I am from Bengal and in Bengal Basanti pulao is very famous.It is a traditional Bengali dish. It is also called kesar pulao, Bhog ka pulao or Shahi Pulao. In Durga puja and other pujas this pulao recipe is used to prepare.It is very auspicious, tastes heavenly.I made it in authentic Bangali style.It is also very easy to cook.My family love it too much.Let's start how to make this recipe.Shall we ? 🙂

Ingredients :
1. 250 gms Gobindo Bhog or aromatic rice.
2. Cashew nuts 25 gms.
3. Raisin 25 gms.
4. Bay leaf 2
5. Ghee 2 tablespoon
6. Vegetable oil 2 tablespoon
7. little Soaked Saffron milk
8. Cardamon 4-5
9. Cinnamon 2-3
10. Cloves 4-5
11.Dry roasted dust spices (3 cardamom,1 cinnamon,2 cloves,little mace)
12. 1 teaspoon grinded mace(optional)
13.1 teaspoon ginger paste
14. 2 tablespoon sugar
Method :-
Step 1- At first wash the rice properly and soak it for 30 minutes.If you don't want to soak it then please wash it properly.After that mix it with little amount of ghee.
Step 2- Take a Pan and heat it.After heating it add oil and ghee.Add bay leaves,all whole spices,a pinch of mace,ginger paste, cashew nuts and raisin on hot oil and fry it for 2 minutes on medium flame.
Step 3- Add rice and stir it continuously for 4 to 5 minutes on low medium. After frying it add water 2 and 1/2 cups.(two times the quantity of rice, Please watch my video below where you will get the exact information of the water).Cover it with a lid and cook it for 10 minutes on medium flame.
Step 4- Then you will get nice fluffy rice.Now add the special spice for the recipe, also add sugar and little amount of saffron milk for color.Mix it,turn off the flame with adding some ghee. Cover with a lid for another 10 minutes. And it is ready to be served hot. Garnish it with saffron.
