CRISPY & CRUNCHY RICE VEGETABLE CUTLET / RICE VEGETABLE PAKORA / CRISPY LEFTOVER RICE CUTLET

A Crispy rice vegetable cutlet can be perfect for our evening snack.Leftover rice goes best with it.These restaurant like cutlets can be baked,shallow fried or deep fried to match one's desire.whenever I have some extra cooked rice I use to make this dish in the evening.Do try this recipe you will forget restaurant's cutlet.I made it in simple way even without batter.Lets learn how to prepare this crispy and crunchy cutlet...

1. Restaurant style Paneer Vegetable Cutlet / Crispy Cottage Cheese & Vegetable Cutlet

Ingredients
                               
                            1. 1 bowl any type of cooked rice   
                     2. 2 medium size boiled and smashed potato
                     3. 1/2 grated carrot
                     4. 1 finely chopped capsicum
                     5. finely chopped beans
                     6. 1 tablespoon grated ginger
                     7. some raw peanuts
                     8. 1 tablespoon chaat masala
                     9. 2 tablespoon cornflour
                    10. 1 tablespoon baking soda
                    11. some coriander leaves
                    12. 2 chopped green chillies
                    13. 1 tablespoon cumin seeds
                    14. 1 teaspoon garam masala
                    15. 1 tablespoon dry roasted cumin powder
                    16. 1 tablespoon coriander powder
                    17. 1 teaspoon kashmiri red chilli powder
                    18. salt as required
                    19. bread cramp (4 breads grinded)
                              20. oil to fry


Method :
           1. put 1-2 tablespoon oil on a hot pan and give some peanuts in the hot oil to fry. After frying it add ginger,cumin seeds and stir until the aroma comes from it.

        2. Now add all the veggies and fry it for 3-4 minutes.Give some salt to soften our veggies.

      3. Take a bowl,smash the potato.Give cooked rice, fried veggies, all the spices, coriander leaves,cornflour in it and mix it very well.

        4. Shape it as you like.Now add baking soda in the bread-crumb and mix it well.Coat all the cutlets with this bread-crumb properly.

            5. Take sufficient oil to fry and let it hot.Now give the cutlet in hot oil and fry it on both sides until golden brown.Then take it out from the pan and keep it on a tissue paper to absorb extra oil. 
Here our crispy and cruchy super tasty rice vegetable cutlet is ready. Enjoy it with salad and sauce or with tea and coffee.Enjoy your favorite homemade snacks like restaurants...
