EASY & PERFECT KASHMIRI SHAHI PULAO / MIXED DRY FRUITS PULAO RESTAURANT STYLE STEP BY STEP WITH VIDEO

Kashmiri Pulao is one of the most tasty & easiest pulao of all.The main ingredient of this pulao is mixed dry fruits & mixed flavorful spices.Also garnished with fresh fruits,the divine touch of saffron makes it shahi pulao.so do try this special dish and give me good feedback...Lets know how to prepare this special pulao...

Ingredients :
                     1. 200 gm basmati rice ( 30 minutes soaked)
                     2. 25 gm sliced cashew nuts
                     3. 25 gm raisin
                     4. 25 gm sliced pistachio
                     5. 1 medium chopped onion
                     6. 3 tablespoon ghee
                     7. some saffron milk
                     8. 1 tablespoon grated ginger
                     9. some whole garam masala
                    10. 2 bayleaves
                    11. 8-10 black pepper
                    12. 1 teaspoon cumin seeds
                    13. 1 teaspoon fennel seeds(saunf )
                    14. 1 tablespoon saunf powder
                    15. 2 chopped green chillies
                    16. 1 tablespoon sugar
                    17. salt to taste


Method :
                 Step 1 : Take a pan and pour ghee, let it melt.Give all dry fruits on hot ghee and fry for a minute.Immediately take them out from the pan.Add onions and fry golden brown.Take it out from the pan.

                 Step 2 : Now give ginger,bayleaves,saunf,cumin seeds,pepper,garam masala dust(grinded) in the hot pan .Mix it for a while,when comes aroma from it add rice. Stir it well for 2-3 minutes on low flame.Add saunf powder,salt in this rice.

               Step 3 : After mixing it add 1 and 1/2 cup water in it.Add saffron milk and mix it.Now cover it with a lid for 10-12 minutes on low flame.Open the lid,add sugar and fried fry fruits and fried onions in it.Mix it lightly or toss it,you can take out the bayleaves.Now turn the flame off and cover the lid for 10-12 minutes.


Open the lid and garnish it with chopped apple and pomegranate seeds (optional).Here our tasty & delicious Kashmiri pulao is ready to be served hot...
