Ingredients :
1. 2 medium boiled & smashed potatoes
2. some boiled jack fruit
3. 1/2 boiled carrot
4. 50 gm smashed paneer
5. 1 chopped tomato
6. 1 chopped onion
7. 1 tablespoon chopped garlic
8. some dry roasted peanuts
9. some fresh coriander leaves
10. 1 chopped green chilli
11. 1 dry red chilli
12. 1 bay leaf
13. 1 teaspoon red chilli powder
14. 1 tablespoon garam masala
15. 1 tablespoon turmeric powder
16. 1 teaspoon cumin seeds
17. 1/2 teaspoon roasted fennel seeds/saunf
18. 1/2 teaspoon roasted carom seeds/ajawin
19. 1 teaspoon black pepper
20. 1 tablespoon sugar
21. 1 teaspoon cumin powder
22. 1 teaspoon coriander powder
23. salt to taste
24. 2 tablespoon cashew nuts paste
25. 2 tablespoon ginger paste
26. 2 tablespoon curd
27. 2 tablespoon oil
28. 1 tablespoon ghee
To Coat Koftas :
29. 2 tablespoon corn flour
30. 2 tablespoon all purpose flour

Step 1 : Heat a pan and give some oil into it. Give ginger paste, red chilli powder,roasted peanuts into hot oil.Stir it & add cumin seeds,red chilli.Now add all boiled veggies and paneer with salt. Add some sugar and mix them well for 3-4 minutes.Turn off the flame and let the mixture cool completely.
Step 1 : Take a pan and add some oil,heat the oil.Now fry the onion,garlic & tomato for 1-2 minutes.Add some water in it and boil it for another 2-3 minutes on medium flame.Now make a paste of the onion mixture into mixture grinder.
Step 2 : Now on that pan give some oil and after heating oil,add bay leaf,red chilli,cumin seeds,little sugar & mix it little. Add the onion paste and add all the powdered masala including salt into it and stir it well for 5-6 minutes on medium flame. Now give cashew paste,curd and some water. After mixing it cover it with a lid for 5-6 minutes.
Step 3 : Open the lid add ghee in it and now give all the koftas into the gravy . Turn off the flame after 2 minutes.Here it is ready our special dish shahi kofta curry.I have garnished the dish with fried small kofta pieces and roasted peanuts and coriander leaves.
