Ingredients : 
                     1. 2 whole baingan (eggplant)
                    2. 2 chopped onions
                   3. 1 tbspn ginger garlic paste
                   4. 2 chopped tomatoes 
                   5. 3 chopped green chillies
                   6. some green peas (optional)
                   7. some coriander leaves
                   8. 1 tspn cumin seeds
                   9. 1/3 tspn turmeric powder
                  10. 1 tspn cumin powder
                  11. 1 tspn coriander powder
                  12. 1/2 tspn kashmiri red chilli powder
                  13. 1 tspn sugar
                  14. salt to taste
                  15. 3 tbspn mustard oil





Method :- 
                 Step 1 : Wash the baingan properly and cut little at the end portion of baingan to roast easily and brush some oil on it.Now take a chapati stand and place on the gas burner and place the baingan on the stand.Roast from the both sides well on high flame until baingan becomes soft and moist. After cool down peel off the baingan and cut the stem with knife.Now smash it with fork or hand properly.

                Step 2 :  Now take a pan and heat for sometime, add oil on hot pan. After that give cumin seeds,onion on hot oil and saute for 2 minutes. Then add ginger garlic and green chillies & cook it for another 2 minutes on medium flame. Cover it with a lid.Open the lid add peas and tomatoes in it and cook it for 2-3 minutes.Add all the powdered masala and stir well.Now give smashed baingan and mix it well.Add salt to taste & cook it for another 3-4 minutes on medium flame.Turn off the flame after mixing coriander leaves on the bharta.
