Ingredients 
                      1. 1 chopped potato in cubes
                      2. 1 chopped carrot in cubes
                      3. some cauliflower florets
                      4. some chopped beans
                      5. 1 chopped capscicum
                      6. 1 bowl fresh green peas
                      7. 1 large roughly chopped onion
                      8. 2 inch ginger cubes
                      9. 8-10 garlic cloves,1 green chilli
                     10. 2 roughly chopped tomatoes
                     11. 8-10 cashew nuts(optional)
                     12. 100 gm paneer
                     13. some coriander leaves
                     14. mustard oil
                     15. 1 tspn turmeric powder
                     16. 1 tspn kashmiri red chilli powder
                     17. salt to taste
                     18. water 1 cup

For Kolhapuri Masala :-


                       1. 4 dry red chilli

                       2. 2 bay leaves
                       3. 1 tspn poppy seeds(posto)
                       4. 1 tspn sesame seeds
                       5. 1 tspn cumin seeds
                       6. 1 tspn coriander seeds
                       7. some whole garam masala
                       8. some desiccated coconut

Method 

 * Dry roast all the whole spices for 2 minutes.Pour them into mixture container.Now Saute onion,garlic,ginger tomato & cashew for 2 minutes.Turn off the flame .Now grind it with the special masala, & make a thick paste,don't add water in it.

* Now Fry the paneer and keep aside.Fry all the remaining veggies and take them out,keep aside.Now cook the paste for 2 minutes in some hot oil and add green peas,mix it.Add all the fried veggies,stir it.Add all the powdered masala with a cup of water.Now cook it for 8-10 minutes on medium flame.


* Open the lid spread coriander leaves and give fried paneer pieces in this gravy.Mix gradually & switch off the flame after mixing it.To Give tadka in it,take a tadka bowl,heat up oil,add red chilli & red mirch powder.Mix the tadka in this kolhapuri sabzi.


Here our Shahi veg Kolhapuri ready to be served hot with naan or roti....
