Yellow Lentils or moong dal tadka is a very popular side dish in India.Its goes perfect with jeera rice or any kind of rice. I have prepared it in dhaba style with some twist.This dal tadka has been special & healthy with some fried vegetables.Its not like regular dal tadka. Making this dal tadka is very simple and easy.Do try it at home. Lets learn how to prepare this special dal tadka.

Ingredients :
                          1. 200 gm moong dal
                           2. some green peas
                           3. 3 sliced green chillies
                           4. 3 dry red chillies (tadka special )
                           5. 1 tablespoon grated ginger
                           6. 3 tablespoon ghee
                           7. 1/2 chopped capscicum
                          8. some chopped beans
                          9. 1/2 chopped carrot
                         10. 2 chopped tomatoes
                         11. some fresh coriander leaves
                         12. 1 teaspoon turmeric powder
                         13. 1 teaspoon coriander powder
                         14. 1 teaspoon cumin powder
                         15. 2 pinch of hing (asafoetida)
                         16. 2 bayleaves,little mace
                         17. some whole garam masala
                         18. 1 tablespoon cumin seeds
                         19. 1 tablespoon sugar
                         20. salt to taste
                         21. 1 teaspoon garam masala powder
                         22. 1 teaspoon kashmiri red chilli powder
                        23. some kasuri methi ( dry fenugreek leaves )

Method :
                              Step 1 : Dry roast the moong dal for a minute on medium flame.Take a cooker and give thrice quantity of water of dal and let it boil.Then add dry roasted moong dal,bayleaf,some whole garam masala,some turmeric & salt to taste.Cover the lid of cooker and give 5 whistle on medium flame.

                  Step 2 : Take a pan and give ghee, let it melt.Now give cumin seeds,crushed garam masala,bayleaf,green chillies,red chilli,hing & mix it for a minute.Add the carrot,beans,capscicum salt and stir it for 2 minutes.Add tomato,peas in it & mix it.Cover it with a lid for 5-6 minutes.

               Step 3 : After opening the lid add ginger and mix it for a minute. Now add all the powdered masalas in the mixture and mix it for few seconds.Give boiled dal in it and stir it well.Cover it for 3-4 minutes on low flame.Add some sugar,coriander and dry roasted kasuri methi and mix it.

                         For Tadka : Take a tadka bowl and put some ghee, let it melt.Add cumin seeds,hing,green cardamom,red chillies and red chilli powder.After mixing it pour the tadka mixture into the dal and stir it .Here our dhaba style moong dal tadka is ready to be served with jeera rice.Enjoy the dish... 

{ Special Note : You can skip the vegetables in this dal.Also can use mustard oil instead of ghee.Onions can be added in this dal tadka. }
