Rajma or red kidney beans curry is a famous & flavorful dish throughout India.The rajma curries are mainly two types, one Punjabi rajma masala,and other Kashmiri rajma masala.Both are awesome,aromatic and authentic.I made it in authentic Kashmiri style.This dish is burst with aroma of a variety of special spices,also very easy to cook.It goes best with rice or paratha as you like.Do try this royal recipe and give me good feedback.So lets start how to learn this authentic kashmiri rajma....

Ingredients :
1. 250 gm red kidney beans (7-8 hrs.soaked)
2. 2 tomato paste
3. 3 tablespoon yogurt
4. 2 tablespoon mustard oil
5. 1 tablespoon ghee
6. 1 teaspoon asafoetida
7. 1 red chilli,some mace
8. 2 green cardamom,1 cinnamon,2 cloves
9. 1 bayleaf, 2 green chillies
10. 1 tablespoon grated ginger
11. some coriander leaves
12. 1 teaspoon sugar
13. dry roasted powdered spice(cumin,coriander,black pepper,kasuri methi,whole garam masala,red chilli)
14. 1 teaspoon turmeric powder
15. 1 teaspoon coriander powder
16. 1 teaspoon garam masala
17. 1 teaspoon cumin powder
18. 1 teaspoon cumin seeds
19. 1 teaspoon kashmiri red chili powder
20. salt to taste
Method :
Step 1 : Boil the rajma in pressure cooker for 8-10 whistle.Keep the extra stock of boiled rajma aside.Now Put oil & ghee on hot pan and let it melt.Give cumin seeds,hing,red chillies,whole garam masala,bay leaves,sugar and ginger.Mix all the things for a minute.Add green chilli,tomato paste and stir it for 2-3 minutes on medium flame.
Step 2 : Give all the powdered masalas and mix it for a minute.Now add boiled rajma with curd on low flame.After mixing it cover it with a lid and cook it for 3-4 minutes.Then add stock in it and again cover it for 10-12 minutes on low flame.
Step 3 : Opening the lid add coriander leaves,garam masala,and ghee for extra flavor.Now ready our royal or shahi rajma masala.Serve it with rice or paratha and enjoy the Kashmiri dish at home....
