PINDI CHOLE IN AUTHENTIC PUNJABI STYLE / PUNJABI CHOLE MASALA / DHABA STYLE CHICKPEAS CURRY WITH VIDEO
This Punjabi Dhaba special recipe is famous for its authentic spicy flavours and mildly sour taste.This dish will leave burst of flavors on your taste buds, will tempt you to eat more.It goes well with Amritsari Kulcha or Aloo Ka Paratha. Making this chole is also very easy & I have prepared it in authentic punjabi style.This Special chole is usually black in color & dry. Ingredients :
1. 250 gm chickpeas (overnight soaked)
2. 2 bayleaves
3. 4 sliced green chillies
4. 1 tablespoon kasuri methi
5. 1 big tablespoon grated ginger
6. 1 tablespoon chopped garlic
7. 1 tablespoon tamarind paste (optional )
8. 1 teaspoon sugar
9. 1 tablespoon ghee
10. 1 teaspoon tea
11. some fresh coriander leaves
12. 1 teaspoon kashmiri red chilli powder
13. 1 teaspoon black salt
14. some whole garam masala
15. 1 teaspoon coriander seeds
16. 12-15 whole black pepper
17. 2 teaspoon carom seeds
18. 1/2 teaspoon cumin seeds
19. 1/2 teaspoon fennel seeds
20. 1 teaspoon dry mango powder
21. 1 teaspoon turmeric powder
22. salt to taste
Method :
Step 1 : Take a clean white cotton (malmal )cloth and pour the tea and bind it.Now cook the soaked chole with this tea cloth bag,bayleaves,some whole garam masala,some black and white salt and enough water in the pressure cooker for about 30 minutes or till fully boiled.Now You can take out tea cloth bag and bayleaves from it.Keep aside the boiled chole with its water.
Step 2 : Take a pan and dry roast all the whole spices and make a powdered spice.You can skip this process.Put ghee and oil on a hot pan and let it melt.Give cumin,ajawin,garlic,ginger,chillies & mix it for few seconds.Add all powdered spices and stir it.Then add boiled chana or chole into it.Mix it on low flame.Add salt and roasted spice,stir it for few minutes.
Step 3 : Add chicpeas water in it and cover it with a lid.Now cook it for 20 minutes on low flame.Now add some black salt,tamarind paste,sugar,and some fresh coriander leaves.Mix it well for another minute.Ready our special Pindi chole or pindi chana.Serve it with and enjoy the special day.
